Dr. Sheldon’s Recipes – Kale, Cucumber and Apple Salad with Pecans and Gorgonzola

serves 4

  • 3-4 stalks of lacinto kale
  • 1/2- 1 large cucumber, peeled and chopped into chunks
  • 1/2  apple, cut into chunks
  • 1/4 cup candied pecans, roughly chopped (TJs carries these)
  • 1/4 cup (or less) crumbled gorgonzola cheese
  • 1/4 cup balsamic vinaigrette

Remove the kale leaves from the stems and chop finely. Add the rest of the ingredients and dress with the dressing.

Balsamic Vinaigrette

  • 1/4 cup balsamic vinegar
  • 1/4 – 1/2 cup olive oil (depending on how tart/strong you like your dressing)
  • 1-2 tsp honey
  • salt and pepper to taste
