03 Jun Dr. Sheldon’s Recipes – Kale, Cucumber and Apple Salad with Pecans and Gorgonzola

serves 4
- 3-4 stalks of lacinto kale
- 1/2- 1 large cucumber, peeled and chopped into chunks
- 1/2 apple, cut into chunks
- 1/4 cup candied pecans, roughly chopped (TJs carries these)
- 1/4 cup (or less) crumbled gorgonzola cheese
- 1/4 cup balsamic vinaigrette
Remove the kale leaves from the stems and chop finely. Add the rest of the ingredients and dress with the dressing.
Balsamic Vinaigrette
- 1/4 cup balsamic vinegar
- 1/4 – 1/2 cup olive oil (depending on how tart/strong you like your dressing)
- 1-2 tsp honey
- salt and pepper to taste
